Bangers and smash is a fun take on classic St.Patrick’s Day recipe that your whole family is sure to love, it’s a meal of deliciously fried sausages topped with crispy onions and served with cheddar topped smashed potatoes.

March is always a special month to me. It’s the month in which I was born, so I always have a birthday celebration to look forward to, it’s the month in which I first started working with amazing brands and really taking my blog to the next level, it’s the month that has a holiday that has everything popping up in my favorite color (green, and yay for spring) and of course it’s the month that has a fun holiday, St. Patrick’s Day. If you’re looking for a fun St. Patrick’s Day recipe, you’ve come to the right place.

As I was shopping at Pick ‘n Save, they had the most amazing display of potatoes, and I just knew I had to make a recipe with them in honor of St. Patrick’s day (remember my lettuce selfie disaster? I was a little more hesitant this time around lol).

Although I do not have an Irish heritage to boast of, I do have a dog named Clover, and I just so happen to have a small clover tattoo (sorry dad, no it doesn’t ‘wash off’ lol) so everyone just assumes I’m Irish when they see it, it’s ok, I’ll roll with it.

I’ll roll with it and get jazzed up about the month because I do feel lucky. Is it luck of the Irish that guides me through the month? Is it the thought of happy rainbows and leprechauns with pots of gold that always makes me smile around this time of year? Who knows! But I do know that I love St. Patrick’s Day menu ideas.

I had always heard of ‘bangers and mash’ but never really knew what it was. I did a little research (thank you to the almighty google) I found out that ‘bangers’ are really just another term for sausages (usually pork sausages) and mash is of course short for mashed potatoes. Wanting to keep it traditional yet add my own flair on it, I decided to make bangers and smash.

Delicious pork sausages fried with onions, served next to smashed potatoes. The way the smashed potatoes came out were far beyond what I could have hoped. They ended up looking like little pots of gold, overflowing with bubbly golden cheddar.

And the flavors, oh my goodness, so good! The bangers with fried onions on top served next to cheese smashed potatoes, such a simple dish to put together and perfect for your St. Patrick’s Day evening.

Ingredients

  • 1 lb pork sausages
  • 1 onion medium, finely sliced into strips
  • 1 Tbs extra virgin olive oil
  • 5 golden potatoes medium
  • 1 tsp salt
  • 1 tsp garlic salt
  • 1 cup shredded sharp cheddar cheese
  • 1 Tbs parsley finely chopped (optional)

Instructions

  • In a large frying pan add the oil, onion slices and pork sausages, cook over medium-high heat, browning on all sides. Cook until no pink remains in the middle of the sausages.

  • In a microwave safe container or bowl place potatoes and microwave on high for 13 minutes, or until a fork poked in goes in easily.

  • Preheat oven to 400 and line a baking sheet with aluminum foil and spray with cooking spray.

  • Remove potatoes from microwave and allow to cool for 5 minutes, then cut them in half and lay them flat side down on the baking sheet.

  • Take a spoon and press into the center of the potato half to 'smash' it. Repeat until all potatoes are smashed. Sprinkle potatoes with salt and garlic salt, then take little pinch fulls of cheddar and place it in the well created by smashing the potatoes. Bake for 7-10 minutes, or until the cheese is melted. Remove from oven and allow to cool for a few minutes.

  • To serve place 1 sausage and some onions on a plate and then place two potato halves onto the plate. Sprinkle the potatoes with parsley and enjoy!
